Valentine’s Day Packed Lunch

She’s a nice mommy.

Put these in your kids’ lunch boxes and bring a Valentine’s Day smile to their little cupid faces!

I would suggest making these at least a day in advance.  That way, they can just be popped into a container on Valentine’s morning and off they go.  They are perfectly delicious at room temperature.

Here is what it will take:

Pepperoni Roll Hearts

prepared pizza dough (refer to this post for the recipe)
a few tablespoons pizza sauce, recipe follows
about 2 oz. turkey pepperoni slices
about 3 oz. shredded pizza cheese blend or mozzarella
olive oil

First for the sauce.  This is a great, basic sauce recipe that can be used on pasta or pizza.  I try to keep a batch in my fridge at all times.  It comes together in no time flat!

Basic Tomato Sauce 

1 28 oz. can of crushed or pureed tomatoes
1 bunch of fresh basil
a few peeled cloves of fresh garlic
2 tablespoons sugar
a pinch of salt
1 tablespoon extra virgin olive oil

Throw everything in a pot and cover.  Bring to a bubble on a medium flame.  That’s it!

While your sauce is melding its flavors, turn your dough out onto a floured surface.

You can either use homemade, store bought, or just pick up a ball from your local pizzeria.  I like to keep a homemade batch in my freezer or fridge, so I can offer my family a healthier version made with whole wheat flour.  Here is a link to my recipe, which makes a lotta dough so you’ll always have some extra laying around:  http://yinmomyangmom.com/2012/01/28/bulgogi-pizza/

Work it into a rectangle shape.  You can use a rolling pin, or, I just use my fingertips.

Spread a few tablespoons of tomato sauce all over the surface of the dough.  The rest can go into an airtight container in your fridge.  Don’t worry!  You’ll find plenty of uses for it.

Now just shingle turkey pepperoni slices all over…

…and sprinkle on some cheese.

And now for the fun part:  carefully roll one side in towards the center, pinwheel style.  Stop when you get to the middle.

Repeat with the other side…

…and slice out the portions with a serrated knife.

Place them in an oiled baking dish with plenty of space in between.  They will puff up quite a bit in the oven…

…and coax them into a pretty heart shape.  Brush them with a little olive oil, and bake for 45 minutes at 350 degrees.

Add a drink and a piece of fresh fruit, and win their hearts this Valentine’s Day,..
