Buffalo French Fries

Have I ever told you I go bonkers for Buffalo wings?  Sorta like that crazy coo-coo bird with the cocoa puffs… Just another facet of my sparkling personality!

You have landed on Part 4 of my Fun French Fry Sub-Series, under the umbrella series: 2012 Food Trends for the Home Cook.  And yes, I am a huge food nerd.

Try this one for your Superbowl Party!  Your vegetarian friends will want to kiss you on the tingly orange mouth!

Start with my basic Oven Fries recipe, only leave out the crab seasoning and just use a sprinkling of salt.  While they are getting crisped in the oven, gather your Buffalo besties:

2 tablespoons melted butter
Your favorite Hot Sauce to taste (I used 2 1/2 tablespoons)
1/8 teaspoon Garlic Powder
1 or 2 ribs of Celery
1 /4 cup your favorite Bleu Cheese Dressing
3 tablespoons Bleu Cheese Crumbles

(These quantities are for one large potato.  Increase/decrease as needed.  Use some common sense for crying out loud, people!)

Shave the celery very thinly (on the bias) with a mandoline-type slicer, or with a sharp knife.

Put melted butter in a large bowl with hot sauce and garlic powder.

Swirl to combine.

Make sure your oven fries are good and crispy because they are about to get smothered in that beautiful Buffalo bath…

Throw ’em in the bowl and toss to coat.

Dish them out and top with a cool, creamy dollop of bleu cheese dressing, that crisp shaved celery, and an extra tangy hit of bleu cheese crumbles.
